Cavalli Toscana Rosso IGT from Tenuta degli Dei
A mature red wine from Tuscany with French roots
In 2000 Tommaso Cavalli decided to grow vines on the hills of Tenuta degli Dei. Until then he had dedicated himself very successfully to the breeding of trotting horses. For this project "Cavalli wine" he brought expert help to his side by choosing the star oenologist Carlo Ferrini . Due to the orientation and altitude of the vineyards, the two decided to grow only the international grape varieties Alicante, Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. And so it happened that the first wine produced by Tommaso in 2004 not only bore the name Cavalli, but since the beginning was a blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot - a Tuscan Frenchman, so to speak. The grapes are harvested and processed with great care. After vinification in stainless steel tanks, the wine matures for 18 months in oak barrels. Then there are another 12 months of maturation and rest in the bottle. By the way: this cosmopolitan drinking pleasure can be found also in the 1.5 liter magnum bottle, in a beautiful wooden box which is a perfect gift for birthday, Christmas, name day - or perhaps simply as a gift to yourself!
Cavalli: red wines with international format and Tuscan roots
The Cavalli Toscana Rosso IGT was the first red wine produced in the cellars of the Tenuta degli Dei. Then followed other fine wines: such as Le Redini, which can be regarded as the youngest of the two IGTs due to its shorter time in barrel and bottle. Le Redini is also a Merlot and Alicante blend, with a clear focus on Merlot. Although there is no Sangiovese in the vineyards of Tenuta degli Dei, Chianti Classico Forcole has been part of the Cavalli range since 2013. The 80 per cent Sangiovese part required for the Chianti Classico come from a leased vineyard close to the property. A beautiful wine assortment, which is rounded off by other tasty products. Tenuta degli Dei: a picturesque estate with the blessing "from above“
The Tenuta degli Dei covers a total area of about 70 hectares. The vines grow on five hectares. The sunny locations are at an altitude of 400 to 450 meters above sea level. The ground is rich in Galestro. All in all ideal conditions for viticulture. And in between the horses romp around on the paddocks, llamas peek over the fence and the dogs of the family greet visitors with loud barking. A second vineyard, in which more than 1,800 Alicante vines thrive, is located at the family estate in Florence. These grapes are also processed on the Tenuta degli Dei. In contrast to the Conda d‘Oro, where it cools down a little during the night, here temperatures remain high during the day and at night and the soil is loamy. Another peculiarity is that the winemaking facilities and the cellar are not located directly in the estate, but within the walls of the Romanesque church of San Leolino. This is directly above the entrance of the Tenuta degli Dei: the tanks and machines needed for the vinification process stand wall to wall with the church. Tommaso reveals that sometimes you can hear the churchgoers sing. The wine cellar is an ancient vault that lies just below the church. One could say that the wine from the Tenuta degli Dei - which directly translated means "God’s winery" - is produced with a heavenly blessing "from above".
