My Chianti Classico Style
Wines are often described with words that raise more questions for many than they answer. For this reason I decided a few years ago to present the flavours of Chianti Classico together with the photographer Eva-Maria Mrazek (evatrifft.com): With fruits, herbs, flowers and leaves in the glass. In other words: In the wine glass you can see what the wine smells and tastes like. And because it's so beautiful, we also did it for Rosato, Vinsanto and olive oil.



Classic│Chianti Classico DOCG
Classic, fresh, vibrant. With lively flavours, juicy structure, balanced acidity and tannins and lot of fun.
Flavours; fruity (cherries, plums, dark berries), flowery (violet), spicy (pepper, juniper, cloves, cinnamon, vanilla)
Production: Grape varieties 80 – 100 % Sangiovese, at least 12,0 % alcohol, at least 12 months maturing
Strong│Chianti Classico Riserva DOCG
Strong, well structured, full-bodied. Deep flavours of fruits and spices, strong tannin structure, fine acidity, persistent. Suitable for years of storage.
Flavours; fruity (fully ripe cherries, plums, blackberries, blackcurrants), spicy (coffee, wood, tobacco, cinnamon, vanilla, smoke)
Production: Grape varieties 80 – 100 % Sangiovese, at least 12,5 % alcohol, at least 24 months maturing, of which at least 3 months in bottle
Elegant│Chianti Classico Gran Selezione DOCG
Elegant, full-bodied and expressive. Fine fruity and spicy flavours, impressive structure, elegant acidity and tannins, terroir-related and long-lasting.
Flavours: fruity (fully ripe cherries, plums, dark berries), spicy (juniper, pepper, chocolate, liquorice, vanilla, cinnamon, wood, leather)
Production: Grape varieties 80 – 100 % Sangiovese, at least 13,0 % alcohol, at least 30 months maturing, of which at least 3 months in bottle



Fresh│Rosato Toscana IGT
Fresh, lively, uncomplicated. It fascinates with its fruity flavours, animating with lots of drinking fun. Best enjoyed chilled.
Flavours: fruity (raspberries, strawberries, cherries, peach, citrus, melon), flowery (white Roses), spicy (pepper)
Production: as IGT (Indicazione Gegrafica Tipica) not subject to more restrictive rules, by direct pressing and/or Salasso method
Sweet│Vinsanto Chianti Classico DOC
Sweet, velvety, complex. Pleasurable from the nose to the finish. Large bouquet of aromas, intensely fragrant, sweet, supported by compact acidity, velvety and robust, long-lasting.
Flavours; fruity (oranges, figs), nutty (almonds, walnuts, caramel, honey), spicy (vanilla, coffee, straw)
Production: 60 - 100 % Trebbiano Toscana and/or Malvasia Bianca, at least 12 % alcohol, at least 24 months maturation in caratelli (50 -150 l barrel)
Spicy│Olio Extra Vergine d'Oliva DOP
Fruity, spicy, green. Is often dark green to green with golden reflections, smells and tastes grassy, fruity, with bitter notes and has often an intense spiciness.
Flavours: fruity (green apples, pomegranates) green (grass, artichokes, green tomatoes, salad, olive leaves, green almonds), spicy (basil, rosemary, pepper, chili, ginger)
Frequent varieties: Frantoio, Moraiolo, Leccino, Correggiolo, Pendolino, Acidity up to 0,5 %
Fine│SuperTuscans
Originally the term "Super-Tuscan" was used by Anglo-American wine journalists in the 80s. This meant wines that could not be classified as Chianti Classico, but often contained the best of a winery. In the meantime, the production conditions for Chianti Classico have changed: The focus is now more on the autochthonous Sangiovese grape and the Supertuscans have decreased overall. Some winegrowers still attach great importance to expressing the typical terroir with the international grape varieties. The offer is varied: Sangiovese in combination with international grape varieties such as Merlot, Cabernet Sauvignon or Syrah, but also pure international or pure Sangiovese can be found. But all Super-Tuscans have one thing in common: they are red wines for the highest demands and special occasions, which can be stored perfectly.
