The name Cavalli stands for products of the highest quality in Italy and throughout the world: the Foho Fiorentino is a very special "hot" delicacy from the house of Cavalli. Hot because "Foho" means fire on the one hand and because it is a fiery peperoncino oil on the other. Habanero chilli peppers are fermented in an Olio di Oliva extra vergine using a process specially developed by Tommaso’s brother-in-law Stefano. In this way, the taste of the fresh fruits - both the pungency and the sweetness of the Habeneros - is gently preserved in the oil. The heat can be enjoyed in well dosed amounts by spraying the oil sparingly onto vegetables or grilled meat, for example. Whenever life needs a bit of sharpness.
Cavalli - a synonym for Italian Lifestyle & Style
When you hear the name Cavalli, you immediately think of the extravagant creations of the fashion designer Roberto Cavalli, which can be admired on the catwalks of the world and weared by international stars. But the name Cavalli stands for even more. For example, for the successful trotting horses that the son Tommaso breeds on the Tenuta degli Dei. For the precious grappa, which is made from their own grape marc. Or for the famous Roberto Cavalli Vodka, which should not be missed at any jet-set party. But Cavalli also stands for the new Ginarte, which is refined with herbs from Tuscany. And last but not least: for some years now the name Cavalli has been synonymous with top wines from the Chianti Classico! The Cavallis are simply a family with a sense of good taste…
Red wines with international flair and Tuscan roots
Tommaso has only been active as a winegrower since 2000. He was quite simply of the opinion that it would be a pity not to grow wine on this piece of land in the heart of Chianti Classico. For this reason, he asked for his opinion the oenologist Carlo Ferrini, known beyond the borders of Italy. And he agreed to one hundred per cent with Tommaso. They divided together the five hectares in question into parcels. Only the international Alicante, Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot grape varieties were planted there. And in 2004 was produced the first Cavalli wine: the Tenuta degli Dei Cavalli Toscana IGT - a blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot. Later on another IGT was added to the range - the Le Redini. It is a blend of Alicante and Merlot grapes. Since 2013 Cavalli produces also a Chianti Classico with the name Forcole. The necessary Sangiovese grapes come from a vineyard very close to the property that Tommaso has leased. On the property of the Cavallis in Florence there is a second vineyard. The Alicante grapes from the approximately 1,800 vines are also processed at the Tenuta degli Dei.
Tenuta degli Dei: a heavenly estate with horses, dogs, llamas and vines
In the early 70s Tommaso’s father, the famous Italian fashion designer Roberto Cavalli, bought the property below the Romanesque church of San Leolino, which is only a hill away from Panzano in Chianti. For several years the designer, who originally comes from Florence, used the estate as a place of silence and tranquillity far away from the hustle and bustle of the jet-set fashion world. Since 1989 Tommaso Cavalli, Roberto's son, has been living with his wife and children, two dogs, llamas and many noble trotting horses on the 70 hectare property. And he was the one who turned his father’s original refuge place into a flourishing business
